Recipes So Good, You Won't Just Want 'Em for Easter/Passover

Dear Vegan at Heart,

Today your mission is to drool over some good-lookin' Easter and Passover recipes that you can make anytime.
 
Whether you're getting ready to host a vegan Easter brunch or a Passover Seder and you've got family to impress, or you don't have a religious practice but want to take any opportunity to make a nice special meal, boy, have we got the dishes for you!

Finding Vegan found some recipes for us so we can focus on hiding vegan candy-filled, reusable plastic Easter eggs in the garden or hiding matzoh in Uncle Ira's closet for the kiddies.

(Note that this soup contains tofu, which comes from soybeans, which aren't kosher for Passover in the Ashkenazi tradition. Rice is also considered "kitniyot" and is a no-no. The kitniyot issue is illuminated here. Ashkenazi vegans can also choose to go the Sephardic route for their seder, which allows tofu, beans and rice.)
