Stellar Summer Smoothies, Sorbets & Sweet Treats
11 Jul 2011

Dear Vegan at Heart,

This week your mission is to try out one of these sweet, simple, healthy, cool summer treats.

Delicious, healthy summer treats abound in the vegan blogosphere, and they couldn't be easier to make with just a few simple ingredients.

This week your mission is to try one of them. Pick one out, bookmark it, print it, email it to yourself--whatever, and add the ingredients to your shopping list.

lime watermelon frostyWatermelons are the cooling-est fruits on the planet, and they're nice and alkaline to boot. Here's a nice li'l recipe for a Lime Watermelon Frosty from the Healthy Happy Life blog, which has a slew of smoothie and juice recipes to choose from.

 pineapple sorbet

This Ridiculously Easy Pineapple Sorbet from the FatFree Vegan Kitchen

has one ingredient. One. But adding a bit of coconut milk will make it more like a pina colada. So will adding rum. ;-)

coconut ice creamI saw a link to this Date-Sweetened Coconut Ice Cream recipe in the latest Girlie Girl Army newsletter and got instant ice cream maker envy. Got one in your kitchen? Try this out!

kale pear smoothie

Up your nutrient intake by adding greens to your smoothies. Kale wins the prize for most nutrient-packed green. You can't really even taste it in this Kale Pear Smoothie, which tastes fruity, not kale-y. If you really don't like kale, try a green smoothie with baby spinach or romaine lettuce, as in this recipe below, also from the Vitamix website.

nut sorbetSpeaking of Vitamix, at Vegetarian Summerfest this past weekend, we tabled next to the Vitamix blender dude. He showed us how to make "nut sorbet." It should be called "I Can't Believe I Made This Ice Cream." It was that good. He just eyeballs the recipe but says it's approximately: 1 c almonds, 1 c pecans (if not roasted nuts, then add a pinch of sea salt), 2 dashes apple pie spice (cinnamon, nutmeg, allspice), 1 dash of vanilla extract, 1/4 c of agave and this much ice. Blend it all at once. Presto yumo!

kiwi popsiclesIf you have kids (or even if you don't), try these Kiwi Popsicles, which I found through Finding Vegan, a super useful website that hand picks seasonal recipes from the web and puts them in one place.

raw cookie dough blizzardAlso on Finding Vegan was a Raw Cookie Dough Blizzard recipe that captures the best of cookie dough blizzards without the added sugar and saturated fat.

If you try one of these, let us know what you think. Got another favorite summer treat recipe? Please leave a comment or rate this mission.

Stay cool out there!
